	Vegetable Poutine
Fresh cheddar curds, or your favorite cheese,
	in large crumbles
As much variety of fresh vegetables as you like.
Best with a mixture of colors ie:
	Broccoli
	Green beans
	cauliflower
	carrots
	red onion
cut the veggies to cook in approx same time. throw the whole bunch into a
covered casserole dish. I like to add a chopped tomato or two for moisture,
bake at 350, till just about tender, then add the cheese , finish baking.
For some strange reason kids love this

	Alabama Carrots
This is one of those recipes that sounds strange but when you try it you
don't know how you lived without it! It is a great recipe for getting those
who don't like carrots to eat them.

3 cups carrots cut in 2 inch pieces; thick pieces split or 3 cups baby
	carrots
	14 saltine crackers crumbled
	1/4 cup margarine
	3 Tbsp finely minced onion
1/4 to 1/2 tsp black pepper
	dash garlic salt
	dash dried basil
	1/2 cup grated cheddar cheese

Cook carrots in enough water to cover until tender (approx 15 min) Drain
reserving 1/3 cup of liquid. Melt margarine. Mix margarine, onion, crackers
and black pepper. Put in pie pan or small glass casserole dish and sprinkle
with dash of garlic salt and basil. Sprinkle cheese on top and pour reserved
carrot liquid over top. Bake in preheated 425 degree oven for 15 to 20 minutes
until cheese is bubbly and starting to brown slightly and liquid is
	absorbed.

	Muffin Dogs
	2 boxes jiffy cormeal mix
eggs (according to what cormeal recipe calls for)
1 package hotdogs, uncooked and diced
Follow direction on cornmeal box. After cornmeal mix is ready, add the diced
hotdogs and mix again. Place in muffin pan and cook according to directions
on the jiffy cornmeal box, this includes cooking temperature and time of
cooking.  My kids love this with mac-n-cheese.  Great for
	daycares.
