Perfect Coleslaw
8 cups finely chopped cabbage
1/4 cup carrot, shredded
1/3 cup sugar
1/2 tsp. salt
1/8 tsp. pepper
1/4 cup milk
1/2 cup mayonaise
1/4 cup buttermilk
1 1/2 Tbsp. white vinegar
2 1/2 Tbsp. lemon juice
Combine the sugar, salt, pepper, milk, mayonaise, buttermilk, vinegar and lemon juice. Beat 
until smooth. Add the cabbage and carrots. Mix well. Cover and refrigerate for at least 2 hours before serving.

	Seven Layer Salad
	*Ingredients:
	1 large bag of lettuce(no carrots/cabbage/etc added in)
	1 lb of bacon, fried crispy
	6 eggs
	1 bag of frozen peas
	1 medium onion
	1 package of shredded cheese
	2 large cans of mayo/miracle whip
	******************************
	*Start by boiling the eggs and letting them cool while you add the other
	ingredients.
	*Put the lettuce into the bottom of a glass pan
	*Fry the bacon to crispy. (The recipe is better with crispy instead of floppy
	bacon)
	*Break the bacon into small pieces and sprinkle over the lettuce.
	*Remove the shells of the eggs and chop the eggs up into small pieces. Sprinkle
	them into the pan on top of the bacon.(You can add more or less eggs if you
	like)
	*Pour the peas, still frozen, onto the pan and make sure they are evenly
	spread out. (It is ok if there is still a little ice on them. I dont know
	why, but the cheap frozen peas work the best!) 
	*Add some chopped onion on top of the peas. (My mom used to leave it out
	when we were kids but now I like a good helping of red onion in this
	salad!)
	*Sprinkle cheese on top. (Add as much/little as you want but leave a little
	bit for the last layer)
	*Pour the Helmans mayo/Miracle whip on top and spread it on like cake frosting.
	It takes practice to not disturb the cheese layer! Make a complete layer
	of the mayo/miracle whip and make sure it covers everything.
	*Finish the top off with a little sprinkling of cheese on top.

	*I absolutely LOVE this recipe and everyone begs me to cook it for picnics.
	It is simple to make once the bacon/eggs are cooked. Just make sure to keep
	it covered and refrigerated. I rarely have leftovers though!-Annika

	Light Crab Salad 
	1/2 cup red pepper finely chopped
	1 pk (340g) imitation crab (surimi)
	1 cup (250Ml) celery finely chopped
	4 green onions finely chopped
	3/4 cup (180 ml) Hellman's Light Mayonnaise
	2 tbsp (15ml) freshly squeezed lemon juice
	2 tbsp (25 ml) fresh dill finely chopped 
	1) Break crabinto pieces (large bol)
	2)Add celery/ green onions/ red pepper
	3) Combine Mayo- lemon juice- fresh dill together
	4) Add mixture to crab/ mix
	5) Chill before serving- serve on a bed of lettuce. Serve ( 4 )

	PRETZEL SALAD
	1-1 1/2 CUPS CRUSHED PRETZELS
	1 CUP SUGAR
	8 OZS. CREAM CHEESE
	1 STICK BUTTER OR MARGARINE
	8 OZS. WHIPPED TOPPING
	1 LARGE CAN CRUSHED PINEAPPLE
	
	Mix butter, pretzels and 1/2 cup sugar together, put in a pan and bake at
	350 degrees for approx. 10 minutes. Break pieces apart. Mix cream cheese,
	1/2 cup sugar, pretzel pieces and drained pineapple. Fold in whipped
	topping.
	Chill 2 hours bwfore serving.

	Bacon Broccoli Salad
	4 cups broccoli florets (small pieces)
	1/2 lb. of bacon
	1/2 cup apple, diced
	1/4 cup red onion, diced
	1/4 cup raisins
	1/4 cup sunflower seeds
	1 1/2 cup mayonnaise
	4 Tbsp. lemon juice
	1/2 cup sugar (more or less to taste)
	
	Directions:
	Cook the bacon until crispy. Drain on paper towels and then crumble.
	
	Toss together the apple, onion, raisins, sunflower seeds and bacon. Add to
	the broccoli in a large bowl. Mix in the mayonnaise and lemon juice. Add
	the sugar. Toss to coat.

	Seven Layer Pasta Salad
	6 cups medium shell pasta
	1 green pepper
	2 stalks of Celery
	4 Hard Boiled Eggs 
	1/2 pound bacon 
	2 bunches Green Onions
	1 cup mayoniase 
	2 tablespoons vinegar
	1/4 cup Shredded Cheddar Cheese
	
	Cook Pasta, drain, and chill 
	Dice Green Peppers, Celery, Eggs, and Onions, set aside
	Fry Bacon and crumble
	Put Mayonaise and vinegar in Bowl, mix well
	Add Onions, Green Pepper, Bacon, let sit for 5 minutes. 
	Add remainder of ingredients; pasta last; mix until creamy. 
	Top with Cheddar Cheese
	If Salad seems to be too dry, add more Mayonnaise.

	Chicken Pasta Salad
	500g Spiral/Penne Pasta
	4 chicken breasts
	500g mushrooms
	4 rashes of bacon (optional)
	2 green capsicums 
	1 red capsicum
	broccoli 
	500g lite cream
	Parmesan cheese 
	chili flakes (optional) 
	salt/pepper (to taste)
	Cook pasta.
	
	Lightly cook all the veggies together with spices. Mix pasta through with
	vegetables. add cream and parmesan and "viola"  20 minutes and you have
	yourself a meal.
