Baked Salmon Croquettes
1 can salmon, drained (1 1/2 c.)
1/2 cup bread crumbs
1/2 tsp. salt
6 Tbsp. mayonnaise
1/2 - 1 tsp. onion powder or dehydrated onion
1/2 tsp. pepper
Additional bread crumbs or cracker crumbs for coating
Blend well, shape into croquettes. Roll in dry crumbs, coating all sides
and edges. Set on ungreased pan. Bake in hot oven at 450 degrees for 20
minutes.

Onion Crusted Chicken
Haven't served this to a child or adult who didn't LOVE it!
Prep time: 10 minutes Cook time: 25 minutes
Serves: 4 - 6 (depends on size chicken)
3 - 4 Boneless Chicken breast halves
1/2 cup+ Dijon Mustard
1 - 2 Lg. Cans French's Dried Onions, crumbled
Preheat oven to 350 F
I filet the chicken breasts to 1/4" or so slices (cooks faster and easier
to cut for the kids).
Then, put the mustard and the onions into SEPARATE bowls.
Keeping one hand wet & one dry...
Coat the chicken in the mustard, then coat both sides with the onions. Lay
on a cookie sheet. BAKE for 20 - 25 minutes @ 350 F.
Serve with Green Bean Casserole, potatoes of choice, and Cranberry Sauce!

Turkey Bacon, Chicken and Cheese Tortillas
8 large tortillas
12 slices turkey bacon (cooked crisp)
1/2 lb. cooked chicken breast (cut into 1 inch slices)
6 oz. lite shredded cheddar or mexican cheese
Preheat oven to 350 degrees. Cover 2 cookie sheet with aluminum foil. Spray
foil with non-stick cooking spray. Put 2 tortillas on each cookie sheet.
Put 3 slices turkey bacon on each tortilla. Divide the chicken and cheese
evenly on the 4 tortillas. Place remaining tortillas on top of the turkey
bacon, chicken and cheese. Bake in oven for approximately 10 minutes. Keep
checking on the tortillas - some ovens will require more or less time.

BEST Pork Chops!
4 to 5 pork loin chops (WITH bone)
1 to 1 1/2 inches thick
2 to 3 granny smith apples, peeled and sliced
1 to 2 large yellow onions, sliced
large handful brown sugar (approx. 1/4 to 1/2 cup)
salt & pepper
Spread onion slices in bottom of glass 9 x 13 x 2 inch dish. Spread apple
slices on top of onions. Sprinkle brown sugar over apples and onions. Salt
and pepper pork chops generously on both sides, and place (in single layer)
on top of apples and onions. Seal dish TIGHTLY with foil. Bake in 325 degree
oven for 3 hours. Serve pork chop with a big scoopt of the carmelized apples
and onions from the bottom of the dish on top!
DELICIOUS!
Great with mashed potatoes!

SWEET AND SOUR CHICKEN
2 TO 3 LBS. CHICKEN BREASTS, CUT UP
1 (8 OZ.) JAR APRICOT PRESERCES
1 (8 OZ.) JAR FRENCH DRESSING
1 PKG. ONION SOUP MIX.
IN A BAKING DISH, PLACE WASHED CHICKEN PIECES.
DO NOT LAYER. COMBINE APRICOT PRESERVES,
FRENCH DRESSING AND ONION MIX, POUR OVER
CHICKEN. COVER AND BAKE 350 FOR 1 1/2 HOURS.
SERVE WITH RICE. MAKES 4 SERVINGS.

Lemon feta stuffed chicken breast with basil
3 whole chicken breasts (more if needed)
1 1/2 cups feta cheese
2 T sour cream
1/4-cup bread crumbs
1 egg white
2 cloves of chopped garlic (more or less depending on taste)
As much minced basil as you can handle
Salt and pepper to taste
Sprinkle of fresh grated Parmesan cheese
Start out cleaning, and flattening the chicken breasts... do not separate
Mix everything except chicken, starting with the feta and ending with the
seasonings. Carefully fill the middle of the breast with a third of the mixture
pinning the sides together with toothpicks
When all are filled stands them up with the stuffed side up in a baking sheet
and sprinkle with breadcrumbs and Parmesan

White Pizza
1 pkg Pillsbury Pizza Crust
2 cups Mozzerella cheese
2/3 cup Mayo (lowfat if preferred)
1/3 cup fresh basil (chopped)
1/4 cup parmesan cheese
2-3 garlic cloves (minced)
1/2 tsp garlic powder
4-5 roma tomatoes (thinly sliced)
Roll out pizza dough , spread on 1 cup of mozzerella then the tomatoes. Mix
together rest of mozzarella, basil, parmesan, garlic, garlic powder and mayo.
Spread mixture on top of tomatoes.Bake in pre-heated 425 degree oven bake
about 20 minutes or until nicely browned on top.
Cut into squares p.s. This is a nice recipe for the holidays(it has red,white
and green) Also nice to serve as a dinner with a nice Ceasar salad. Enjoy!

Even though Kim hates casseroles, I think he would like this one. My son
calls it "That stuff Nanny makes".
In a large bowl combine
1 can of corned beef
1 can cream of mushroom soup
1 can cream of chicken soup and about 1/2 bag of precooked egg noodles. Mix
well. Pour all into a greased casserole dish and bake until bubbly. I add
grated cheddar cheese to the top, but this is optional. I also noticed your
Baked chicken with Broccoli recipe, I add rice to the same recipe. It's real
good. One more quick recipe that my son loves (he's 10).

Noodle and Cheese
(basic macaroni and cheese dish made with egg noodles)
1 bag wide egg noodles
1/2 block medium cheddar cheese-cubed or monterey jack for variety
1/2 block sharp cheddar cheese-cubed
1/2 cup milk
1/2 stick butter or margarine
Precook the egg noodles and begin layering in the casserole dish. Noodles
first them a layer of both cheeses and slice of butter, noodles, cheese,
butter, etc. Add milk over the top and bake at 350 for approx. 25 minutes.
I sometimes stir every 10 minutes to keep everything moist. Top will begin
to brown when done. Enjoy, really easy with a somewhat different taste.

SANTA FE SOUP
1 lb. ground beef
1chopped onion
1 large can diced tomatoes
1 can Rotel diced tomatoes
1 can whole kernal corn
1 can Ranch style beans
1 lb. Velveeta Mexican cheese
Brown beef and onion. Add rest of ingredients. When cheese is melted
- it's time to eat!
Chuckwagon Chili Submitted by: Skinny meatloaf
2lbs. ground beef
1 large yellow onion
3 fresh jalapenos
4-5 cups V-8 juice
28-32 oz. canned diced tomatoes
32 oz. canned kidney beans
2 Tbl. chilli powder
1 Tbl. cumin
1/2 tsp. oregano
1/4 tsp. garlic powder
1/4 tsp. salt
4 fresh cayenne peppers
1 cup cooked macaroni
Step1: Brown and drain ground beef. Add canned tomatoes, onion (chopped),
and jalapenos (finely chopped). Simmer for 20-30 minutes.
Step 2: Add V-8 juice, kidney beans, seasonings, and cayennes. You need to
make a slit
lengthwise in the cayennes. Simmer for 2-3 hours.
Step3: Remove cayennes from chilli, and add macaroni. Simmer for 15-20 more
minutes.
Serve topped with sharp cheddar cheese.
For a little extra taste, add 2 whole bay leaves when adding seasonings.

Sue's Southwest Spaghetti
1/2 pkg thin spaghetti, cooked
1 12&1/2oz can white chicken in water
1/2 onion, chopped
5 large fresh mushrooms, sliced
2 Tbs canola oil
1 Tbs submarine peppers, chopped
1 Tbs chili powder
1 large can tomatoes with chili seasoning
1 can tomato soup
1 small can whole kernel corn
a few drops hot sauce
Saute onion in oil til onion is clear. Add mushrooms and submarine peppers.
Stir til hot. Set aside and saute chicken til hot. Add onion mixture,chili
powder, tomatoes, soup and corn.Add a few drops of hot sauce to taste. Stir
and simmer til flavors blend. Combine with hot, cooked spaghetti. Allow flavors
to blend before serving.

one package of tortillas
one package of hot dogs
one pan of hot oil/grease
Warm tortillas to roll hot dog in and place on hot oil/grease until set.
You can fry up to four at a time. Fry until just browned or how you like
them.
You can put anything on them you like. Kids as well as adults love them.
Have fun with them, and enjoy.
Steve's Totally Gay Barbecue Chicken Wings

Everyone who's ever tried this recipe liked it - so far.
They're messy but they're good enough to be worth it.
3 to 5 pounds of chicken wings
1 12oz can of Classic Coca-Cola
1 12oz bottle of Catsup or Ketchup
(never did figure that out)
Preheat oven to 425.
Place wings in a roasting pan that has been treated with a light coating
of cooking spray.
Roast COVERED for 45 minutes at 425.
While wings are roasting, mix catsup and Coke in a medium mixing bowl until
well blended.
Remove wings from oven and drain off fat carefully.
Spoon catsup Coke mixture over wings until completely covered.
Return wings to oven and bake UNCOVERED for another 45 minutes gently stirring
and basting ONCE about half way through.
The Coke will glaze and the no one will be able to guess what's in the sauce.
Serve with plenty of napkins or, better yet, provide finger bowls with
warm water and lemon.
Okay, Robin. Here's another one. This is a favorite because everyone
tries to figure out what's in it but no one ever does.
Secret Sweet & Sour Sauce
for Cocktail Meatballs, Vienna Fingers, little sausages, etc.
In a medium saucepan, combine equal parts prepared mustard and grenadine
syrup.
Heat gently until completely blended (at least 30 minutes to allow the mustard
to calm down).
Place cooked, hot cocktail meatballs in a chaffing dish and pour over sauce.
Flambe Option: Flame with one to two ounces of heated Cognac.
If you make your own cocktail meatballs, try using Italian style breadcrumbs

works well with the sauce.

Stuff in a Pot
one box herb flavored Stove Top Stuffing
(not the big box. For some reason, Stove Top tastes better in this recipe
than other brands)
one can Campbell's Italian Tomato Soup (or equal part of your favorite tomato
sauce will do)
one jar of nacho cheese (with chili if you prefer)
other options you can add: salsa tobasco sauce (highly recomended)
peppers and onions chopped meat (cook it first)
Cook the stuffing according to directions on box, then just simply add all
the other goodies.
Serve with chips, fritos, bread, or anything else you can think of.

6-8 CORN TORTILLAS,2 FINELY DICED WHITE ONIONS, 1 TBLSP. GARLIC, 1 TSP.
CUMIN(OPTIONAL), 12 OUNCES FINELY GRATED CHEDDER CHEESE OR JACK AND CHEDDER
MIXED TOGETHER,2 SMALL CANS OF SLICED OLIVES VERY WELL DRAINED, 1-1/2 POUNDS
GROUND CHUCK, GROUND TURKEY, OR GROUND CHICKEN.
BROWN ONION, GARLIC, CUMIN, AND MEAT TOGETHER AND DRAIN OFF ANY FAT, MIX
WITH 1-2 8 OZ. CANS TOMATO SAUCE (AND IN THAT TOMATO SAUCE ADD CHILI POWDER
TO TASTE - REMEMBER THAT THE MORE YOU ADD, THE HOTTER THE TASTE, AND ADD
ABOUT 2-3 OUNCES OF THE CHEESE MIXTURE YOU HAVE FINELY SHREDDED AND BRING
TO A SLIGHT BUBBLE. TAKE OFF THE STOVE.
IN A PYREX DISH THAT NEEDS TO BE AT LEAST 2-3 INCHES DEEP, SPRAYED WITH A
FOOD SPRAY SO NOTHING STICKS, PLACE A SMALL AMOUNT OF FOOD MIXTURE ON BOTTOM
OF PYREX, PLACE 2 TORTILLAS SIDE BY SIDE ON TOP OF THAT AND THEN SPOON MORE
MEAT MIXTURE ON TOP OF THAT AND ADD A SMALL AMOUNT OF CHEESE MIXTURE.
KEEP MAKING LAYERS UNTIL ENDING UP WITH MEAT MIXTURE ON TOP. ADD BALANCE
OF CHEESE MIXTURE.
COVER WITH ALUMINUM FOIL AND BACK IN OVEN AT 350 DEGREES FOR AT LEAST 1/2
HOUR. SERVE WITH EITHER HOMEMADE REFRIED BEANS (WHICH IS A CHORE IN ITSELF)
OR SERVE WITH A LARGE CAN OF REFRIED BEANS HEATED THRU AND BUBBLY HOT WITH
EXTRA CHEESE ADDED TO IT TO MAKE IT EVEN CHEESIER.
SERVE WITH A GREEN TOSSED SALAD AND ENJOY.
