Chicken Cheese Jam Bites

These are always the first to go when I have a party – and they’re so easy!

1 sheet puff pastry
3 boneless, skinless chicken breasts, cut in small chunks
2-3 sprigs fresh rosemary, minced
Salt and pepper to taste
1 tbsp olive oil
6 oz shredded asiago cheese
˝ cup fruit preserves (apricot, raspberry, pineapple, and fig work well)

Preheat oven to 400 degrees.

Sprinkle a work surface with flour. Roll the sheet of puff pastry into a 10x15 rectangle. Cut puff pastry into 24 2 ˝ inch squares. Gently press one square into each cup of a mini-muffin pan. Set aside to make filling.

Heat nonstick skillet over medium heat. While heating, in a bowl mix chicken with oil, salt, pepper, and rosemary. Saute chicken stirring frequently until no longer pink, about 5 minutes. Remove from heat and allow to cool for a few minutes. Spoon chicken mixture into each of the pastry cups. Top with about a half teaspoon of preserves and some of the shredded cheese. Bake until pastry browns and cheese melts, approximately 8-10 minutes.

Stuffed Jalapenos

1 (26 oz.) can whole jalapenos, sliced in half lengthwise with seeds removed
1 (8 oz.) package cream cheese, room temperature
2 Tbsp. dried chives
1 Tbsp. diced pimientos
1/4 cup mayonnaise

Beat room temperature cream cheese until fluffy. Add mayo, chives and pimentos. Fill jalapeno halves and refrigerate for several hours before serving.

Monterey Spinach Melts

Ritz Crackers
1 (9 ounce) package frozen chopped spinach, thawed and drained
Heavy dose of garlic powder
Granulated Onion
1/4 cup mayonnaise
1/4 cup sour cream
1/2 - 3/4 cup shredded mozzerella
4 ounces monterey jack cheese, thinly sliced

Preheat oven to 375°F.
Combine all ingredients except crackers and Monterey Jack cheese in bowl. Spread spinach mixture onto crackers. Place on a cookie sheet. Top with slices of monterey jack cheese.
Bake until cheese is melted.
Serve immediately.

Cream Cheese and Jelly

Remove your favorite cream cheese from wrapper.
Add your favorite jelly (my favorite is a hot pepper jelly) to top and sides of cream cheese.
Serve with crackers.
It tastes wonderful! Enjoy!

Quick Guacamole

2-3 Ripe Large Avocados
1 12 oz. can Herdez Salsa
2 Limes
salt
pepper
garlic

Peel and add avocados to bowl.
Pour in Herdez Salsa
Squeeze in Limes
Add salt, pepper and garlic to taste.
Blend and mash with wisk fork.
Serve with Tortilla chips.
The Herdez salsa has alot of tomato, garlic and onion and doesn't take away from the fresh taste of the salsa. A quick party favorite.

The Best Damned Dip Ever!
******************************
*This recipe requires a lot of bowls to mix ingredients in but it is well-worth it.
*Ingredients:
2 large cans picante salsa
2 large cans of refried beans
1 lb browned ground beef
1 package of taco seasoning
1 bottle of ranch dressing
2 avacados
1 package of guacamole mix
1 can of sour cream
1 package of mexi-mix cheese(some form of mexican shredded cheese from kraft etc)
1 jar of sliced jalapenos

*This recipe is supposed to look like layers in the glass pan.
*Mix 1/2 the salsa and all of the refried beans together and spread over the bottom of a glass pan.
*Heat the ground beef and add the package of taco seasoning.
*Spread the beef stuff on top of the beans/salsa mix.
*In a seperate bowl, mix the rest of the salsa and 1/2 of the sour cream and some ranch together. This recipe calls for a lot of "adding to taste" so add as much or as little as you want.
*Spread the salsa/sour cream/ and ranch mixture into the pan on top of the beef.
*Mix the guacamole mix and avacados together in a seperate bowl. Follow the instructions on the guacamole mix package! It may require other stuff.
*Spread the guacamole into the pan too.
*Sprinkle cheese over the whole pan and then add the slices of jalapenos. I usually add about 20 jalapenos but you can add more or less according to your own taste.
*This recipe is great with tortilla chips!
*You can also add anything else that suits you.

Dried Beef Rolls
2 pks Dried beef
tub of softened cream cheese
horseradish
mix creem cheese with about 2Tbs.horseradish(to taste, I like it strong)
Spread thin on dried beef and roll up. cheese will hold it together.
This is a family favorite and sooooo easy.

this super easy my sis in law gave me, and trust me when i tell you it is yummy yummy !!
cheezy sausage squares

1 lb. of jimmy dean sausage
1/2 lb. of velveeta cheese
rye party squares (the little rye bread squares)
cook up the sausage, drain the fat, cube the cheese and add to sausage.
spread mixture on party squares
broil until tops are brown and bubbly
delicious and super easy !!

Cheese Ball
2 (8 oz) cream cheese
1 jar "dried beef"
1 "bunch" green onions

Cream cream cheese. Cut dried beef and green onions into small pieces. Add to cream cheese and form into a ball. Serve with "Ritz" crackers.
Enjoy!

Horseradish Cheese Ball
Easy...easy...easy!
8 ounces cream cheese
1/4 cup or less milk
horseradish, amount will depend on taste
parsley
Blend cream cheese and horseradish. Add milk to desired softness. Put into pretty bowl and sprinkle with parsley.
Serve with fresh veggies and crackers.
It is best if you make this a day ahead but work as a last minute, too.

Salmon Log

1 8 oz pkg cream cheese, softened
1 lg can salmon, drained and bones removed
1 tsp liquid smoke
1 tsp lemon juice
2 T finely grated onion
Chopped walnutes or pecans
Fresh chopped parsley (optional, but pretty)

Blend together all but chopped nuts. Shape into a log. Roll in chopped nuts and parsley. Cover and refrigerate for 2-3 hours to blend flavors. Serve with crackers. This appetizer is excellent and always served by me or one of my friends when there is a gathering.
