Bread Pudding



Pineapple Bread Pudding
1/4 lb butter or margarine
3/4 cup sugar
4 eggs
1 can crushed pineapple, drained
5 slices cubed whitebread

Cream butter and sugar.
Add eggs.
Fold in crushed pineapple and bread.
Bake in buttered bread pan at 350
degrees for 40-60 minutes.


Amish Friendship Bread
:

1) The starter for this bread has been passed around my town for years. Someone usually gives you the "starter".

You'll have to make it. The starter is :
1 cup flour, 1 cup sugar & 1 cup milk.
It's a sweet bread, like a coffee cake.
It's yummy and goes in the snap of a finger! This recipe makes two loaves of bread. As you mix the ingredients listed below, please remember:
- Do not use a metal bowl or spoon for mixing -
Do not refrigerate the dough - If air gets into the bag, let it out. It is normal for the batter to thicken, bubble and ferment.

2) Recipe
: Write down Date Received:
/ Day 1 This is the day you receive the bag. Do nothing.
/ Day 2 Squeeze the bag.
/ Day 3 Squeeze the bag.
/ Day 4 Squeeze the bag.
/ Day 5 Squeeze the bag.
/ Day 6 Add 1 cup flour, 1 cup sugar, 1 cup milk. (Move to a gallon zip lock)
/ Day 7 Squeeze the bag.
/ Day 8 Squeeze the bag.
/ Day 9 Squeeze the bag.
/ Day 10 Combine batter, 1 cup flour, 1 cup sugar and 1 cup milk.

Mix with wooden spoon or spatula.
Pour four 1 cup starters into separate zip lock bags.
Give starter to four friends along with instructions.

3) To remaining batter in bowl (there is very little left) add:
1 cup oil
1 cup sugar
1 teaspoon vanilla
3 large eggs
1/2 teaspoon salt
2 teaspoons cinnamon
2 cups flour
1/2 cup milk
1/2 teaspoon baking soda
1 large box instant vanilla pudding
1 1/2 teaspoons baking powder

Pour into 2 large well greased and sugared (mix of cinnamon & sugar) loaf pans. You can sprinkle extra cinnamon and sugar on top. Bake at 325 for one hour. This recipe is delicious!   Enjoy and pass it on!


Danish Aebleskivers
This is the Olson Family Recipe. This recipe is delicious, but the problem is that you need to use an abelskiver pan. Check specialty cooking stores on the internet.

Use knitting needle or similar object to turn aebleskivers.
Ingredients:
2 cups buttermilk
2 cups flour
3 eggs
1 tsp. baking powder
1 1/2 tsp. salt
1 tsp. soda
2 tsp. sugar

Instructions:
Separate eggs, beat yokes, add sugar, salt and milk. Then add flour, soda & baking powder which have already been sifted together. Stiffly beat egg whites into peaks and fold in. Place small amount oil (less then a tsp) in each cup, fill 2/3 full (or more) of dough.

Optional: Small tsp. of applesauce on top of dough, barely cover with dough keep turning a quarter keep turning. Sprinkle with powder sugar and serve with raspberry jam. Dilute raspberry jam w/ orange juice.



Banana Bread
1 cup canola oil
3 cups sugar
4 eggs
3 1/2 cups flour
2 teaspoon soda
1 tsp nutmeg
1 1/2 tsp cinnamon
2/3 cup nuts - pecans or walnuts
2/3 cup water
3-4 bananas mashed

Mix sugar with oil, and eggs well, then add the bananas.Mix the dry ingredients alternating the water. Fold in nuts. Pour into 3 greased and floured loaf pans. Bake at 350 for one hour.



Date Nut Bread
5 cups flour
2 eggs
1 cup white sugar
1/2 cup dark brown sugar, (packed)
1/2 cup dark lt brown sugar, (packed)
2 tsp salt
2 tbls baking powder
6 tbls vegetable oil (check cup amount)
1 tablespoon dry grated orange peel
3 cups water
1 lb pitted, chopped, dates
2 cups chopped pecan nuts

PREPARATION:

Chop the dates (if they're whole) in a food processor, add a heaping tablespoon of flour to keep dates from sticking). Set aside. Chop whole pecans, set aside.

In a mixer or large bowl; add all ingredients together except dates and nuts.

Bring the 3 cups of water to a boil. Turn off the stove, move to a cool burner. Add the dates, let sit for a minute. Start the mixer, mix dry ingredients for 10-15 seconds and then add the hot dates mixture slowly to the flour mix.

Grease the bottom of 2 bread loaf pans with cooking oil. Pour mixture into pan; bake at 350 degrees for one hour, check center with knife to make sure its set.

Makes 2 loaves.



Coffeecake  (My sister in law, Jackie's Recipe)
1 cake yeast
¼ cup lukewarm water
1 cup scalded milk
¾ teaspoon salt
¼ cup sugar
filling

6 tablespoons shortening
3 ½ cups sifted flour
1 egg, beaten
melted butter

Soften yeast in water. Combine scalded milk, salt, sugar and shortening. When lukewarm, add yeast and half the flour and beat well. Let rise until very light, and then add egg and remaining flour and mix well. Let rise. Roll dough into a rectangle on a floured surface and brush with butter. Sprinkle with filling and roll up like a jellyroll. Cut into 1 inch slices and arrange pinwheel fashion in a cake pan placing 2 to 3 slices, flat in the center. Let rise until light and bake 30 minutes at 400 F. Drizzle with powder sugar glaze (powder sugar and milk).

Filling for 3X recipe:

2 cups brown sugar
3 cups walnuts or pecans
2 cups white sugar
3 tablespoons cinnamon
1 cup flour
Mix well



Bread Pudding

4 cups white bread cubes
2 cups milk, hot
2/3 cup brown sugar
1/2 cup raisins
2 apples, sliced thin
1/2 tsp cinnamon
1 tsp vanilla
3 large eggs

Combine bread cubes, apples and raisins in a large bowl.
Add milk and sugar
Mix thoroughly and allow to stand for 20-30 minutes
Add beaten egg, cinnamon and vanilla and mix thoroughly.
Pour into a 1 1/2 quart sprayed casserole dish

Bake uncovered in a 350 oven for 45 minutes to 1 hour, until set and lightly browned.
